Stuffed Jumbo Pasta Shells – developed by kac young, DCH / Heart Easy®

Ingredients:

10 oz. chopped spinach OR 1 cup chopped, fresh basil leaves

2 cups non-fat, drained cottage cheese

4 Tbsp. SoySation® Parmesan Shreds

4 oz. SoySation® Mozzarella or 3-Cheese Blend Shreds

16 oz. tomato basil sauce

8 oz. jumbo pasta shells

2 eggs whites

¼ tsp. garlic powder

½ tsp. pepper

¼ cup chopped mushrooms

Non-fat olive oil spray

¼ cup SoySation® Parmesan Shreds, reserved

Preparation:

Cook spinach and drain thoroughly. Cook jumbo shells according to package directions to al dente. Drain and cover with cold water.

Spray a small pan with olive oil. Add mushrooms and sauté for 2 minutes.

Preheat oven to 350 degrees. Combine spinach, cottage cheese, egg whites, shredded mozzarella, shredded parmesan, garlic powder, mushrooms, and pepper. Stuff mixture into shells and place on pan sprayed with olive oil. Cover with tomato basil sauce. Bake uncovered for 45 minutes or until bubbling. In the last 5 minutes of cooking, sprinkle tops of shells with 1.4 cup of reserved SoySation® Shreds. Serves 8.
