Spritz Butter Cookies

These traditional cookies really stand out when dipped in chocolate or sprinkled with sugar. Substituting soy flour for some of the wheat flour adds a slight nutty flavor and makes for a great texture. For the Sunshine Lemon Loaf recipe, visit soyfoods.org.

1 1/2 cups all-purpose flour 1/2 cup soy flour 2 tsp. baking powder 1 cup unsalted butter, softened 1 cup powdered sugar 1 egg 1 tsp. vanilla extract 1/2 tsp. almond extract Colored sugar for garnish (optional)


Preheat the oven to 350?.

Mix together the all-purpose flour, soy flour, and baking soda. Set aside.

Cream the butter and powdered sugar in a large mixing bowl until light and fluffy. Beat in the egg, vanilla, and almond extracts.

Gradually add the flour mixture to the creamed mixture and mix well.

Fill a cookie press with the dough and press cookies onto ungreased cookie sheets. If desired, top with colored sugar.

Bake for 10-12 minutes, or until edges are just starting to turn brown. Cool slightly on cookie sheet and then remove to a rack to cool completely.

Makes 6 dozen cookies
