Edamole recipe


Recipe adapted from Cook the Story


  • 12 ounces of shelled edamame, cooked according to directions
  • 1/2 cup cilantro leaves
  • 1/4 cup lime juice
  • 1/4 cup chopped onion
  • 2 cloves of garlic, minced
  • 1 tbsp minced jalapeno pepper (optional)
  • 1/2 tsp salt


Blend all together until smooth.? Add water and/or vegetable oil if needed to reach desired consistency.

Makes 6 servings.

Nutrition per 1/2 cup serving: 110 calories, 4.5g fat, 9.3g carbohydrate (1g fiber), 8.5g protein
