Recipe adapted from Cook the Story
- 12 ounces of shelled edamame, cooked according to directions
- 1/2 cup cilantro leaves
- 1/4 cup lime juice
- 1/4 cup chopped onion
- 2 cloves of garlic, minced
- 1 tbsp minced jalapeno pepper (optional)
- 1/2 tsp salt
Blend all together until smooth.? Add water and/or vegetable oil if needed to reach desired consistency.
Makes 6 servings.
Nutrition per 1/2 cup serving: 110 calories, 4.5g fat, 9.3g carbohydrate (1g fiber), 8.5g protein
