Carrot Apple Muffins

Apple Carrot Muffin with Soy Yogurt
ingredients
  • 2 c. carrots, grated
  • 1 1/2 c. apples, grated
  • 1/3 c. maple syrup
  • 1/2 c. plain or vanilla soy yogurt
  • 1 tbsp. canola oil
  • 1 1/2 c. flour
  • 3/4 c. walnuts, chopped
  • 1/4 c. brown sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. nutmeg
  • 1/2 t tsp. salt
  • 1/2 c. raisins
  • 2 c. carrots, grated
Directions

Preheat oven to 400F. Lightly oil a muffin pan.

In a large bowl, mix soy yogurt, oil, apples, carrots, and maple syrup.

In a separate bowl, combine flour, oat bran, walnuts, sugar, baking power, baking soda, cinnamon, ground ginger and salt.

Fold the wet ingredients into the dry ingredients until just combined. Then fold in the raisins.

Spoon the batter into the muffin pan.

Bake for 20-25 minutes until golden, or until a toothpick comes out clean.
