Berry Streusel Muffins

ingredients

Streusel:

  • 1/4 cup unbleached flour
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3 tsp. unsalted butter

Muffins:

  • 2 cups unbleached flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup brown sugar
  • 2 eggs
  • 2 containers Silk? Blueberry Soy Fruity & Creamy cultured soymilk
  • 1/4 cup applesauce
  • 1/4 cup vegetable oil
  • 1 tsp. vanilla extract
  • 1 cup fresh or frozen blueberries
Directions

Preheat oven to 375?F. Grease or line a 12-cup muffin tin with paper muffin cups. In a small bowl, combine flour, sugar, oats, cinnamon and nutmeg. Use a pastry blender or fork to cut in the butter until the mixture is combined and crumbly. Set aside.

In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside. In the bowl of a stand mixer, beat sugar and eggs. Beat in yogurt, oil and vanilla.

Fold flour mixture into yogurt/egg mixture, just until combined. Add blueberries. Do not over mix. Spoon into prepared muffin tin, filling cups ??? full. Evenly divide streusel between muffins.

Bake for 20 minutes until tops spring back.

Makes 12 muffins.
