Tofu Deviled Eggs

Tofu Deviled Eggs
  • 1/2 pkg House Foods Premium or Organic Tofu Medium Firm
  • 1 dozen eggs
  • 2 1/2 tsp. dijon mustard
  • 1/4 tsp. Tabasco sauce
  • 1 Tbsp. minced onion
  • dash paprika
  • dash salt and pepper

In a large pot, boil eggs for about 10-15 minutes.
(Add salt or 1 tsp. of olive oil to prevent egg shell from sticking to egg)

Drain, cool, peel and cut eggs (horizontally).

Remove yolk from egg and put into seperate bowl, adding all other ingredients.

Mix thoroughly and spoon about 1 Tbsp. back into egg white.

Continue with remaining eggs and sprinkle with paprika for garnish.

Serve and enjoy!

Note: for less cholesterol use only 1/2 egg yolk
